CRANBERRY FRUIT DIP

1 8 oz. Carton Vanilla Yogurt
1/4 tsp Nutmeg
1/4 tsp Ginger
1/2 C Cran-Orange Relish
1/4 C Chopped Nuts

 

PREPARATION

Combine all ingredients, cover, chill.

Serve with Assorted fruits for dipping.

CRANBERRY STUFFED CELERY

1/2 C Cranberry Juice
1/4 C Sugar
Cream Cheese
Celery
Fresh Cranberries

PREPARATION

Fresh Cranberries cooked in 1/2 C Cranberry Juice and 1/4 C Sugar for about 5 min

Add Cream Cheese while mix is warm - NOT HOT

Put into celery. Cut into medium chunks.

 

 

CRANBERRY ZINNIT BARS

2 C Whole Wheat Flour
1 C Packed Brown Sugar
2 C Oatmeal
2 Sticks of Butter or Margarine
1/2 tsp Baking Soda

2 Eggs
1 can Whole Cranberry Sauce

PREPARATION

Preheat oven to 350.

Grease 8" or 9" square pan.
Put first 5 ingredients in food processor and mix with steel blade 20-25 seconds. Tip mixture into a large bowl.

Add 2 eggs and mix until just crumbly - not dough. Press 1/2 of the mixture into pan. Spread cranberry sauce over the top. Evenly sprinkle with remaining mixture and press lightly with pancake turner.

Bake 45-50 minutes until golden brown.

 

CRANBERRY-WHITE CHOCOLATE BISCOTTI

1/2 C Margarine (softened)
1 1/2 C Granulated Sugar
2 Eggs

1/2 tsp Vanilla
2 1/2 C All-Purpose Flour
1 tsp Baking Soda
1 1/2 C. Dried Cranberries
1 C White Chocolate Chips

PREPARATION

Preheat oven to 350 degrees. Cream margarine and sugar and add eggs and vanilla, beating well.

Mix lour and baking soda and add to sugar mixture. Fold in the chips and the cranberries. Shape into 3 logs, approximately 2" by 12" and place on a greased cookie sheet.

Bake 30 minutes or until logs are golden. Cool slightly and cut into 1/2 inch slices and put on cookie sheet with the cut side down and bake another 10 minutes.

Transfer to a rack and ENJOY!

 

OATMEAL CRANBERRY WHITE CHOCOLATE CHUNK COOKIES

2/3 C Butter or Margerine, softened
2/3 C Brown Sugar
2 Large Eggs

1 1/2 C Old Fashioned Oats
1 1/2 C Flour
1 tsp Baking Soda
1/2 tsp Salt
1 6 oz pkg. Ocean Spray Craisins (Original Sweetened Dried Cranberries)
2/3 C. White Chocolate Chips

PREPARATION

Preheat oven to 375

Using an electric mixer, beat butter or margerine and sugar together in a medium mixing bowl until light and fluffy. Add eggs, mixing well. Combine oats, flour, baking soda adn salt in a separate mixing bowl. Add to butter mixture in several additions mixing well after each addition. Stir in sweetened dried cranberries adn white chocolate chunks.

Drop by rounded teaspoons onto ungreased cookie sheets. Bake 10-12 minutes or until golden brown. Cool on wire rack.

Makes approximately 21/2 dozen cookies.

 

 

CRANBERRY JELLY

3-1/2 cups cranberry juice cocktail

2-1/4 oz. package powdered fruit pectin

4 cups sugar

1/4 cup lemon juice

PREPARATION

In large kettle, combine cranberry juice and pectin.  Cook and stir to boiling.  Stir in sugar immediately.  Bring to full rolling boil; boil hard for 2 minutes, stirring constantly. Remove from heat, stir in lemon juice.  Skim off foam.

Pour into hot sterilized jars and seal.  Makes 6 half-pints.

Cranberry Apple Jelly:  Substitute 3-12 cups cranberry-apple drink for cranberry juice cocktail.

 

 

CRANBERRY PUMPKIN BREAD

2/3 C Shortening
2 2/3 C Sugar
4 Eggs

3 C fresh cooked pumpkin OR 16 oz can pumpkin.
2/3 C Water
3 1/3 C all-purpose flour
2 tsp Baking Soda
1 1/2 tsp Salt
1/2 tsp Baking Powder
1 tsp Cinnamon
1 tsp cloves
2/3 C Coarsely Chopped nuts
1 1/2 C Fresh Cranberries

PREPARATION

Heat Oven to 350

Grease bottoms only of 2 loaf pans, Mix shortening and sugar in large bowl. Add eggs, pumpkin and water. Blend in flour, baking soda, salt, baking powder, cinnamon and cloves. Stir in nuts and cranberries. Pour into pans.

Bake about one hour and 10 minutes - until wooden pick inserted in center comes out clean. Cool slightly. Remove from pans. Cool completely before slicing.

 

WHITE CHOCOLATE CRANBERRY CAKE

1 cup butter or margarine

1 cup brown sugar

1/2 cup sugar

4 eggs

3 Tbsp orange juice

1 Tbsp grated orange rind

2 cups flour

2 tsp baking powder

1-1/2 cups cranberries, fresh or frozen

6 1-oz squares white chocolate, chopped 
   OR 1 cup white chocolate chips

White chocolate curls

 

GLAZE

3 1-oz squares white chocolate OR 1/2 cup white chocolate chips

2 Tbsp orange juice

 

PREPARATION
Preheat oven to 350 degrees

In a large bowl, beat butter and sugars with an electric mixer.  Add eggs, orange juice and rind; beat well.  Add flour and baking powder; beat well.  Stir in cranberries and chopped chocolate.  Turn batter into a greased and floured 10" tube or bundt pan.  

Bake at 350 degrees for 60 to 70 minutes, or until a toothpick inserted in center comes out clean.  Cool in pan for 10 minutes.  Turn out onto cooling rack.  

Melt chocolate and juice over low heat or in microwave on medium for 1-1/2 minutes.  Stir until smooth.  Drizzle glaze over cooled cake.  Garnish with white chocolate curls.


CRANBERRY LEMON PIE

1 2 crust pie recipe (1 tsp. salt, 11 T. shortening, 2 Cups flour, approx 1/2 cup water)

4 cups cranberries

2 lemons sliced thin (white membrane removed)

1 cup sugar

3 T cornstarch

1 tsp cinnamon

PREPARATION

Mix cranberries, lemons, sugar, cornstarch and cinnamon until cranberries are coated well with dry ingredients.

Place mixture in pie dish on bottom layer of pie crust. Top with another layer of crust.

Sprinkle sugar and cinnamon on top.

Bake: 400 degrees - approx 30 minutes

 


CRANBERRY LEMON BREAD

1/4 Cup oil

1/2 Cup honey

2 eggs

Juice of 1 Lemon

1/2 rind - grated

1 Cup cranberries

1 Cup whole wheat flour

1/4 Cup soy flour

2 T. instant milk powder

2 1/4 tsp. baking powder

1/2 tsp. salt

1/3 Cup sesame seeds

PREPARATION

Beat oil and honey until well blended. Beat in eggs, lemon rind and juice. Mince the cranberries, then stir them in.

Stir in the dry ingredients together, then stir them into the first mixture. Pour into oiled loaf pan.

Bake: 350 degrees for 45 minutes


CRANBERRY WONTON ABANDON

1 Pkg. WonTon Wraps

Walnut Pieces (Optional)

 

Filling:

2 T. butter

10 oz jar orange marmalade

1 1/2 Cup fresh cranberries

1/3 Cup packaged brown sugar

1 tsp. lemon rind

1/2 tsp. ground ginger

PREPARATION

Put all filling ingredients in saucepan and cook until Cranberries pop and mixture thickens. Cool.

Place some walnut pieces inside a WonTon wrap. Place about 1 tsp. Cranberry mixture on top of walnuts. Wet edges and fold like a WonTon. Fry in about 1/2" oil. Sift powdered sugar over tehm and serve warm. (Can add a dollop of ricotta cheese to each, if desired.


CRANBERRY RASPBERRY COFFEE CAKE

1 Cup butter

1 1/4 Cup sugar

4 eggs

1 1/2 tsp baking powder

1 tsp. vanilla

1/2 tsp. salt

2 Cups flour

Filling:
1 Cup cranberries
1 Cup raspberries
1 Cup Sugar
3 T Cornstarch

Glaze:
1 Cup powdered sugar
1 T. Butter
2 T. milk

PREPARATION

Cook filling until thick - cool.

Cream butter and sugar, add eggs one at a time. Blend in dry ingredients. Put 2/3 of batter in 9x13 pan. Spread filling over batter. Drop remaining batter by spoon on top.

Bake: 350 degrees for 25 to 30 minutes. Put on glaze while hot.


CRANBERRY RIBBON BARS

1/2 Cup butter, softened

2/3 Cup brown sugar, packed

1/2 Cup flour

1 1/2 Cup oatmeal

1 Cup almonds, chopped

1 Cup dried cranberries

1/2 Cup raspberry jam

PREPARATION

Beat together butter and brown sugar. Stir in flour, oats and almonds. Reserve one cup for top.

Press remaining mixture into 8 inch greased pan. Combine Cranberries and jam. Spread on oat mixture. Sprinkle with reserved oat mixture.

Bake:375 degrees for 25 to 30 minutes.


CRANBERRY OAT CRUMBLE

1 pkg (3 C) whole cranberries

1 Cup sugar

3/4 cup water

1 yellow cake mix

1 Cup butter, melted

1 Cup oatmeal

1/2 Cup brown sugar, packed

2 eggs

1 tsp ground ginger

PREPARATION

Cook cranberries, white sugar over medium heat until berries pop. Cool.

Combine cake mix, butter, oatmeal and eggs. Reserve 1 1/2 Cups for top. Put remaining cake mixture in 9x13 greased pan. Pour Cranberries on cake. Top with spoons of reserved cake.

Bake: 35 to 40 minutes. Cool

CRANBERRY CHEWS

2 Eggs

3/4 Cup sugar

1 Cup chopped nuts

 

1/4 tsp nutmeg

1 1/2 C biscuit mix

1 Can Chilled Cranberry (whole) sauce

PREPARATION

Beat first 4 ingredients light & fluffy. Stir in biscuit mix. Fold in Cranberry & nuts. Pour into 13 x 9 pan.

Bake: 20 - 25 minutes at 350 degrees. Sift over top with white powdered sugar.

CRANBERRY MUFFINS

1 Cup Cranberries

1/2 Cup sugar

2 Cups flour

4 tsp. baking powder

3/4 tsp salt

1 egg, beaten

1 Cup milk

3 T melted butter

PREPARATION

Put Cranberries through food chopper; mix with half the sugar. Sift remaining sugar with dry ingredients. Combine beaten egg, milk and melted butter, and add to dry ingredients. Stir only until blended. Fold in sweetened Cranberries.

Bake in buttered muffin pans in hot oven (425 degrees) about 25 minutes.

Makes 12 meduim-sized muffins.
